Peach Dry Hop was blended from a single barrel of traditional spontaneously fermented beer brewed in Fall 2018, aged in a cognac cask. At 8 months old, we transferred the beer onto a NJ grown varietal of yellow clingstone peaches known as John Boy. We used a short contact with the peaches to draw light aromatics and a fruity acidity from the harvest before we racked the beer back to barrels for a further 9 months of maturation on oak. At blending, we added a dry hop of Amarillo to complement the peach and add a layer of complexity in aging. We then laid the beer down in bottle for 12 months of conditioning. Upon release, Peach Dry Hop will be 32 months old.
