Hint of Things to Come is a blend of golden sour beers aged in oak barrels with chardonnay musqué pomace and passionfruit. Our friends at Trail Estate Winery in Prince Edward County provided the grape pomace for us after they pressed their chard musqué wine last fall, and we added a few barrels of sour beer to it in a tank before returning it to barrels to soften up for a further 5 months. This beer was blended with a barrel that had been aging with passionfruit for 7 months to provide a tart counterpoint to the smoother wine character. The tannins in this beer are fantastic, and it has such a nice juicy tropical aroma!
