We made this beer with 60% Cadiz malt from Boormalt, a new product created from the grain tritordeum, a cross between durum wheat and wild barley. The yeast that did the work was YF-402, a weizen yeast. We got ourselves something very much like a German wheat beer with a pretzel bready taste to it from this special malt.Now that's a beer with a twist!
