Brewed at Red Duck by Anders Kissmeyer of KissmeyerBeer and Scott Wilson-Browne of Red DuckThere is one particular ale, famous around the world, which is brewed in the Val d’or, in the region of Gaumein Belgium. It is a small, unusual ale, with pronouncedspiceyness, a little tartness and plenty of funk. The malt base for this ale is quite simple, and wefermented first with a simple Belgian yeast strain, thencreated a second fermentation by adding some moresugars and 2 different Wyeast lambic yeasts whichincluded a wild yeast strain isolated from Belgian lambicbeers, a sherry strain, two Brettanomyces strains, aLactobacillus culture, and a Pediococcus culture.Because of the careful fermentation, where the Lambicand Roeselare yeast only had very little to work on, ourGnaume shows very soft Belgian spiceyness and lambiccharacters, with a very subdued “Brett” character. Apellicle has formed in some of the bottles, which is aharmless white “floaty”. Curiously not all bottlesdeveloped this, and the pellicle doesnt remain solid inmost cases when the beer is poured.Red Duck Gnaume offers a bit of Belgian spiceyness, with a pleasing soft, tang, and some interesting flavoursover a broad pallet. Its a really refreshing, Belgian styledlambic golden ale. Our very first Lambic ale, is a beauty, somewhere between the magic of a Gnome, and themagic of that famous ale from Gaume. We love it so much, that we will brew it again!
