COMPOSITION 4 (strawberry/rhubarb)

A series of mixed culture sours, fermented in aselection of oak barrels and blended to balanceacidity prior to introducing fruit. Composition 4 is ablend of golden sours, fermented in oak puncheons,then refermented on rhubarb and strawberry, andbottle conditioned with champagne yeast. Pleasekeep cool, pour carefully and expect some sediment.
