Sour (R)Evolution is our 2017 cider, made from apples from Weaver's Orchards, fermented in house for one month, then rested in Oak Barrels for 6 months. This typically dry cider brings apple notes up front that are buoyed by a sweet-tart character from the wild yeast inhabiting our building. Drink your (R)Evolution!
