We fermented this one for a long time. Five months which for us is crazy long, but hey, winter sometimes seems to go on forever and this process certainly reflected that.Naturally fermented on the farm and subject to very cold and fluctuating coastal winter temperatures. Tt was ready to be bottled just after the first day of spring. We hand-pressed Chisel Jersey and Porters' Perfection varieties that were grown on our farm. We also tossed in some Canada Reinette, Golden Russet, and a few winter banana for good measure. Can you taste the banana? Oh, and there me some quince in there too! Bottled sur lie.
