Astral Infusion, a red wine barrel-aged sour, embodies the fusion of organic pluot juice from Mission-Trail Ranches in Bradley, CA and elderflower thoughtfully cultivated by our 1% for the Planet partners, Coastal Roots Farm in Encinitas. The name, Astral Infusion, felt fitting as the elderflowers resembled stars gracefully infusing into the beer's sunset-hued canvas. Crafted with exclusively CA-grown wheat, this brew stands as a heartfelt tribute to the rich terroir of California. The elderflower, hand-harvested by our Co-Founder/Brewer, Winslow, was promptly added to the beer on the very day of its harvest. And by a beautiful twist of fate, our friends at Mission-Trail had pluot juice available at the same time, giving rise to this unparalleled mixed-ferm creation. Astral Infusion features an aromatic bouquet of juicy plum, pear, and funk followed by plum, apricot, and floral flavors that are complemented by a subtle wine-like character.
