Last Word is our latest Cellar Cyndicate 2023 exclusive, inspired by the classic cocktail of the same name. This first-of-its-kind Pure Project creation rested for 16 months in a blend of Chartreuse barrels from the Grande Chartreuse Monastery in France and gin barrels from Old Harbor Distilling Co. here in San Diego. It then went on to re-ferment on organic dried Rainier cherries for two months. The Chartreuse and gin barrel-aging imparted distinctive herb and botanical elements into this brew, making it well worth the wait. Last Word exudes aromas of preserved lemon, peach, and cherry with a flavor profile rich in herbal complexities complemented by notes of oak. Its medium-light body features bright acidity and a dry finish, delivering an exceptional sensory experience that is uniquely its own.
