Spelt Farmhouse Ale with ApricotsOn top of COVID, this dumpster fire of a year wreaked havoc on the fruit in Colorado. We we able to seek out 300 pounds of apricots from a grower in Paonia, Colorado. We selected a barrel of a new spelt farmhouse beer we're working on and added a bit of Funky Blender to round it out. We fermented 150 pounds of these apricots in a neutral french oak barrel like it was 2015. The result is bright apricot, sweet tart acidity and Saison-like aromas.
