Offa Rex Merciorium. King Offa of Mercia, creator of the largest kingdom before the formation of England, known as the Mercian Supremacy.Way back at the formation of Cult Of Oak, a Quad named Husmerae utlilisled captured wild local yeasts. And here again our local fauna plays a big part in this beer.Firstly an imperial stout was brewed. Coffee added for flavour and armoa. And then local wild yeasts and bacteria encouraged for a long fermentation and aging process. We used one of our brettanomyces barrels, the very barrel used for Husmerae in fact, and this then quietly sat for two and a half years!Do not expect a regular stout, expect vineous qualities, expect the bitterness of the coffee to play with the dryness of the brett. Enjoy how the roast flavours mix with a gentle sourness.There's no real way to classify this creation, maybe a black sour? Maybe as a wild stout? Nevertheless we hope you appreciate and savour this complex fusion that Cult Of Oak and nature have created.
