Last year, after emptying the bourbon barrel that held CHORÓS—our double barrel barleywine—we decided to refill it with a long-gestating American wild ale just to see what would happen. When we pulled the nail to check in on it, we were immediately grabbed by what we tasted.This beer will not appeal to—nor is it intended for—the casual drinker. It is raw, naked and rustic. We could have included fruits or other treatments to round out the edges, but that would have hidden everything we loved about it.The first sip is aggressive, but as the palate adjusts everything softens and it is barraged with waves of flavors both big and subtle that intermingle from the gumbo of the base, the barrel and the barleywine.
