The Terroir Project first initiated from California in 2017 and so we are here to share the same passion. For the fermentation we used our coolship vessels for the chilling of wort and also the inoculation of native yeast and microflora such as bacteria from our brewery area in Santorini. At the same time, we pressed the grapes of Assyrtiko harvest in 2021 and we left them to ferment with the native yeasts from the skins. Then we blend the two products and aged them for 12 months in used oak wine barrels which previously contained Vinstanto wine from Santorini’s local wineries. The Terroir Project indicates the remarkable terroir of Santorini from the ancient past till the glass of tomorrow. Now it’s up to you to open the bottle fresh or let it age longer.
