SPLIT, a barrel-aged Wild Ale. This beer began its journey two years ago in October of 2018, when we mixed at a 50-50 ratio wort that spent the night in our coolship, with beer that had undergone a complete secondary fermentation with our house culture. The blend spent 18 months in a Zinfandel barrel and then an additional 6 months bottle conditioning. Our house culture complemented the spontaneous portion of this blend beautifully! The local microbes from the coolship have contributed a deep and complex funk that has become much more present in recent months and we suspect will continue to evolve as this one is cellared. Overall look for a earthy, funky, bright subtle acid and oakey zinfandel.
