This test batch harnesses wine research to create a true wine-beer hybrid! As brewers we're just now catching up to what winemakers have been doing for 15 year to enhance fruity expression of thiols. We fermented this batch with an experimental ale strain that was created to free the fruity thiols from both wine grapes and hops. We added gewurztraminer grape juice and heavily hopped the whirlpool, but left it without dry hops to allow the grapes to shine.
