Last fall we had the incredible opportunity to work with fruit from John Cline, Ontario's leading pomologist at the University of Guelph's research orchard.We brought in 37 different varietals, and created 9 different blends. This is the 9th blend, made with the 8 different crabapple varietals on the site. This blend is bottle conditioned, and will cellar beautifully.What's it like? The aroma is a touch of citrus and soft barnyard funk. The flavour is dates, golden raisins and apricot skins. It drinks somewhere between spontaneously fermented saison and a light orange wine.The varietals in this blend are:Almata, B10C4, B17C4, Burford, Michelin, Red Fleshed Crab, Red Glow and Scarlet Surprise.
