Austrian-grown whole-fruit lingonberries present a complex, multi-faceted flavor. You'll taste floral notes from the raw Brazillian wildflower honey, some slightly bitter herbal notes from the lingonberry, and a robust-tart-jammy red fruit flavor. We aged the mead for about a month on lingonberries; about 4lbs of fruit per gallon. We also added a small amount of Montmorency cherry juice to steer the flavor more toward red fruit. We then coarse-filtered the mead to remove the remaining lingonberry particulate. Mexican orange blossom honey provides a layer of sweetness with just a hint of citrus to balance everything out.
