Of the Village: Apples On Apples

We love to find new ways to use stuff that may otherwise be thought of as finished. In the Fall of 2024 we were lucky enough to pick and juice Winesap Apples from the historic orchard at Hopewell Furnace National Historic Site. We then took the Apple Pomace – the ground up and pressed apples, and rested it in another cider. The resulting 9 month old cider has a unique softness and tannic complexity, and with apple skins being high in antioxidants and containing anti-cancer compounds, we like to think some of that extra good stuff makes it through. It takes a Village around here, and Apples on Apples is a great example of that!
