Portage was brewed using local barley, spelt, as well as flaked and malted oats, lightly hopped with our aged willamette and wai-iti. It was fermented with a house yeast culture -originally captured from pears grown here on our Finger Lakes property- then reconditioned on brett in French oak wine barrels. Mild acidity, with notes of ripe stone fruit, and light funk
