A beer which would traditionally have been made for the saisonniers,or seasonal agricultural workers in France and Belgium,who would have been paid in part with a lower-strength beer for consumption during and after the workday.Nowadays, its just perfect for after mowing the lawns.This crisp and zesty beer was fermented with a newly released Belgian Saison yeast strain for layered citrus and spice characters,which synergise with a heavy noble-type hop flavour and aroma.A heritage wheat variety called Spelt was used in large quantities for a certain je ne sais quoi,a hard-to-describe dough-like,rustic character which melds perfectly with the expressive yeast.Hefty amounts of Lemongrass grown on the brewery site add layers of complexity.
