This single-barrel stout spent 20 months in a store pick Jack Daniels 6-year barrel named "Perfect Strangers", provided to us by a particularly righteous bar in Bernal Heights, SF.Store-pick barrels, having been selected for their outstanding qualities already, often yield beers we deem worthy of being showcased as a Singularity, and this one is no exception. Tennessee Whiskey’s charcoal filtration often yields a slightly smoother character than its bourbon counterpart, and this shows nicely in the finished beer. Bourbon’s charred intensity is taken down a notch or two to let smooth caramel, toasted peanut, cacao, and brighter, cleaner whiskey notes come through. Dark chocolate-covered honeycomb, a hint of cherry, and touch of warmth in the finish.
