Our old friend Majid loves to bring us unusual ingredients for our ciders, and he usually succeeds in bringing us things we didn't know of or haven't used before. He most recently brought us Dried Limes and Black Limes, both commonly used throughout the Middle East as a spice or tea, and named Loomi in some parts of the region. Unsure of what to expect, we broke them up, and along with some cracked White Pepper, rested them in a dry cider for a full Moon. The result is something uniquely refreshing. A familiar lime note, but with a deep earthiness, pervades on the palate. Combined with a light and subtle cracked Pepper finish this is the perfect Cider for sipping during the warm weather months.
