Barrel Aged Sour Gruit With Foraged Botanicals

For this collaboration we went super old-school with no boil and locally foraged botanicals. We infused juniper branches in the mash, steeped wormwood for bittering, and added juniper berries for more flavour. This rae ale was then primary-fermented with kveik before resting in barrels with our full mixed culture including brettanomyces and lactic acid bacteria.
