In this Cold IPA, we used Pilsner malt and rice to create a super neutral, simple base, hopped it with Centennial and Azacca hops.This particular beer tastes like a perfect mix between a West Coast IPA and a crispy lager. We love how the lager yeast interacts with the hops. It leaves you with an ultra clean beer and really allows the hops to express themselves on a super clean palate- instead of competing with the yeast as they tend to do in IPL.The aroma is bursting with lime, lemongrass and grapefruit. We get flavors of lemon drops, honeydew melon, and a tangerine pithiness. There are notes of orange zest mixed with crisp pine. It’s effervescent, and refreshing, and welcoming, and bright. We really can’t get enough of this dry, crispy crusher and are pretty obsessed with its balance of hoppiness and drinkability.The Cold IPA is a beautiful cross between a traditional IPA and a lager. It’s different than an IPL, being of higher ABV and having loads of hop character. IPL doesn’t have any adjuncts -like the rice we added to the mash. It’s called a “cold” IPA, because it’s fermented at a lower temperature, just like a lager. We used a lager yeast and fermented it for four weeks, as opposed to the usual two week turnout for our IPAs. This lager yeast complements the hops really well.
