Kveik strains of yeast were traditionally used in Norweigian brewing processes, but have recently come to fame in American craft breweries for their unique character and lightning quick fermentations. Nearly all of the abundant flavors and aromas found in this beer are driven by that yeast, primarily the citrusy and farmhouse characteristics. Juniper was used to add a touch of botanical bitterness to balance out this one of a kind beer.
