We love barrel aged wild ales but we don't yet have a whole lot of room for a proper sour barrel program. In the meantime we are doing it on a very small scale!We have exactly one barrel which we have inoculated with a wild yeast blend I captured and cultivated in 2012 on a bright, sunny homebrew day with my good buddy Sean Turk (of the soon to open Olde Salem Brewing Company).WinkNod is a flanders red aged in our 3rd use Bourbon Barrel. Vinous and bracingly tart with notes of brown sugar, spice, balsamic, and dried dark fruits.
