(This bottle also contains some Pinot Noir, its Interwined: Dornfelder label is annotated by hand with "+ PN")This coferment started with the maceration of 40% Dornfelder grapes and 60% handpressed apple juice from locally sourced apples. After 3 days of skin contact, it was pressed, wildly ermented and aged for several more months. The result is 2 bybrid sparkling cider/wine.Ingredients: Dornfelder (+ Pinot Noir) grapes, apples, wild yeast. fermented and bottled by Pellicle Vergistingen.BBF 2 years after bottle date.Bottled 23 JAN 2023
