We’re at a weird time at the moment – super sessionable crisp pale ales are very much reigning supreme, but we’re still making sure to champion the corner of the big boy IPA here at Polly’s. When we wrote the recipe for Beneath the Oak Tree, we wanted to go full on trademark Polly’s – high juice, mega haze, with just a little bit of bitterness to keep everything in check. Vic Secret for a hearty helping of quince, strawberry and passionfruit notes? Check. Centennial for a little bit of pithy, old school bitterness? Noted.
