Blended from oak-aged beer spanning multiple spontaneous brewing seasons, the blend spent an additional rest (18 months) in peach brandy barrels (formerly used for bourbon). Afterwards, it was transferred to stainless for a refermentation on fresh peaches from River Ridge Farm (Portland, CT) and Thrall Family Farm (Windsor, CT). The result is a layered, expressive beer where soft stone fruit plays against the perceived sweetness and subtle vanilla warmth of the barrels.
